This is our lean, mean, texture machine. A beautiful complex nose of pineapple, fresh ocean breeze, melon rind, wet stone, and a floral undertone. The palate is textured and briny with a lovely acid backbone and a touch of honeysuckle that follows all the way to the finish line. We enjoy this wine gruyere grilled cheese, tomato tart, pork belly, and goat cheese.
The impact of terroir cannot be overstated. The Mokelumne River soils, topography, seasonal climate, including cool breezy summer evenings provide the river stone minerality, citrus, tropical fruit and blossom notes on the nose and palate. We acquiesce to these beautiful forces with as little interference as possible in our Estate vineyard.
All of our grapes are hand-picked and immediately whole cluster pressed to capture their fresh, flavorful character. We harvest early in the morning to capture natural acidity, providing vibrancy to the wine. The juice is fermented cool in temperature controlled stainless steel tanks to highlight the pure fruit expressions. Blended post-fermentation, this wine is then sur lie aged in tank with periodic stirring until bottling.
